Colorful, flavorful, and easy to prepare, these grilled vegetable skewers are a summer BBQ staple. Preparation time: 15 minutes (cooking time: 10 minutes)

Ingredients

  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1 zucchini
  • 1 medium eggplant
  • 1 red onion
  • 2 tablespoons of ApothicAri Fire Vinegar
  • 3 tablespoons olive oil
  • 1 teaspoon maple syrup (optional)
  • Fire salt or sea salt, to taste
  • Freshly ground black pepper

 

Preparation

  1. Cut the vegetables into equal-sized pieces.
  2. In a large bowl, combine the Fire Vinegar, oil, maple syrup, salt, and pepper.
  3. Add the vegetables and coat them well. Leave to marinate for 15 minutes (or longer if possible).
  4. Skewer the vegetables onto skewers.
  5. Grill on the BBQ for 8 to 10 minutes, turning regularly, until lightly browned.
