Ingredients
- 1 red bell pepper
- 1 yellow bell pepper
- 1 zucchini
- 1 medium eggplant
- 1 red onion
- 2 tablespoons of ApothicAri Fire Vinegar
- 3 tablespoons olive oil
- 1 teaspoon maple syrup (optional)
- Fire salt or sea salt, to taste
- Freshly ground black pepper
Preparation
- Cut the vegetables into equal-sized pieces.
- In a large bowl, combine the Fire Vinegar, oil, maple syrup, salt, and pepper.
- Add the vegetables and coat them well. Leave to marinate for 15 minutes (or longer if possible).
- Skewer the vegetables onto skewers.
