Crispy Quebec potatoes, roasted to perfection, sprinkled with Fire Salt, and served with a creamy mayo made with vinegar and Fire Spices. A perfectly balanced blend of comfort food and just the right amount of spice. Simple, tasty, and absolutely irresistible.

Ingredients
For French fries
- 4 to 5 Russet or Yukon Gold potatoes from Quebec
- 2 to 3 tablespoons olive oil or canola oil
- 1 teaspoon ApothicAri Fire Salt, or to taste
For the spicy mayonnaise
- 1/2 cup mayonnaise (store-bought or homemade)
- 1 to 2 teaspoons of ApothicAri Fire Vinegar
- 1/2 teaspoonApothicAri Fire Spices
- Black pepper, to taste
Preparation
- Preheat the oven to 425°F (or use an air fryer or conventional fryer if preferred).
- Cut the potatoes into sticks, rinse them in cold water to remove the starch, then pat them dry with a clean cloth.
- Mix the fries with the oil in a large bowl.
- Bake on a baking sheet lined with parchment paper for 35–45 minutes, turning halfway through cooking, until golden brown.
- Meanwhile, mix all the mayonnaise ingredients in a small bowl. Adjust the vinegar or spices according to the desired level of heat!
- When you take them out of the oven, sprinkle the fries with Salt of Fire while they are still hot.
- Serve hot with spicy mayonnaise as a dip.
Tips
- For even crispier fries: soak them in cold water for 1 hour before drying them thoroughly.
- Want a more intense level of heat? Add an extra pinch of Épices de Feu directly to the fries.
- Can also be served with fish & chips, homemade burgers, or as a shared appetizer with drinks.
