Ingredients
- 1 cup red lentils
- 1 tablespoon coconut or olive oil
- 1 chopped onion
- 2 cloves of garlic, minced
- 1 tablespoon of fresh grated ginger
- 1 tablespoon tomato paste
- 1 tablespoonApothicAri Fire Spice
- 1 teaspoon ground turmeric
- 1 teaspoon ground cumin
- 2 cups vegetable broth
- 1 cup coconut milk (or more, to taste)
- Salt to taste
- Fresh cilantro (for garnish)
Preparation
- Rinse the lentils in cold water and drain well.
- Sauté the onion in oil for a few minutes until tender. Add the garlic, ginger, Épice de Feu, turmeric, and cumin, then cook for 1 minute to release the aromas.
- Stir in the tomato paste and lentils, then pour in the vegetable broth. Bring to a boil, reduce the heat, and simmer for 15 to 20 minutes, until the lentils are tender.
- Add the coconut milk and adjust the seasoning with Fire Salt.
- Serve hot, garnished with fresh cilantro.
