Perfect for a sunny summer day, this ceviche showcases Quebec Arctic char—a freshwater fish with firm, delicate white flesh. We revisit the traditional recipe by incorporating fresh garden ingredients: crunchy cucumbers, juicy cherry tomatoes, green onions, cilantro, and garlic flowers. Jalapeño adds just the right amount of spice, while our Fire Vinegar brilliantly replaces the classic acidity of lime, "cooking" the fish and adding a unique depth.

Ingredients

  • 1 pound Arctic char, cut into 1/2-inch cubes (can be substituted with another white fish)
  • 1/4 cup Apothicari Fire Vinegar
  • 2 tablespoons olive oil
  • 1/4 cup thinly sliced green onions (about 2 green onions)
  • 1 cup diced Lebanese cucumbers (about 4 cucumbers)
  • 1 cup cherry tomatoes, halved
  • 3 tablespoons chopped fresh cilantro
  • 1 tablespoon minced garlic
  • 1 tsp chopped jalapeño pepper
  • Salt and pepper to taste

 

Preparation

  1. In a bowl with a lid, mix all the ingredients together. Season with salt and pepper. Cover and refrigerate for 30 minutes.
