For the mayonnaise
Ingredients:
- 2 tablespoons of Apothicari Fire Vinegar
- 1 egg yolk
- 1/4 teaspoon salt
- 1 cup vegetable oil
- Pepper with taste
Preparation:
- In a bowl, mix together the Apothicari Fire Vinegar, egg yolk, salt, and pepper.
- Add the first third of the oil slowly, drop by drop, whisking continuously.
- When the mayonnaise begins to thicken, add the rest of the oil in a thin stream, continuing to whisk.
For the guédille
Ingredients:
- 2 tablespoons Apothicari Fire Vinegar Mayonnaise
- 1 lb of cooked northern shrimp
- 4 hot dog buns
- A few leaves of seasonal greens of your choice (lettuce, arugula, mustard greens)
Preparation:
- Simply spread your bread with fiery vinegar mayonnaise, then top with Quebec northern shrimp and fresh greens.
